Abstract: To explore the quality change of post-harvested commercial bivalves,the metobolic profiles of Yesso scallop Patinopecten yessoensis were studied under stress during live storage.The regualr pattern of four nonspecific immunity factors,including acid phosphatase(ACP),superoxide dismutase(SOD),catalase(CAT)and lysozyme (LSZ)were monitored following the change of time.Wet storage and air exposure storage,two current commercial live storage ways,were carried out at five key links including boarding,transporting,landing,transition holding and purification.The results showed that,during the 106h of post-harvest,ACP activities were first declined and then increased and that SOD activities were first increased and then deceased,indicating that ACP and SOD have good connection with stress intensity of Yesso scallop.CAT activity was detected at a negligible level and LSZ activity was not detected.In a word,nonspecific immunity factors,ACP and SOD activities in the adductor of scallop are needed for further investigation as stress-response indicators and for quality evaluation index of live product.
