Dressing rate and nutritional composition in muscle of crucian carp hybrid Carassius auratus Var. Pengzenensis♀× Cyprinus acutidorsalis Wang♂

Abstract: The dressing rate, approximate nutrient composition, and composition of amino acid and fatty acid were determined in muscle of 1-year-old crucian carp hybrid Carassius auratus Var. Pengzenensis♀×Cyprinus acutidorsalisWang♂ with body weight of (580.33±198.02)g to evaluate dressing rate and nutritional composition of the crucian carp hybrid. It was found that the fish had dressing rate of 66.22%, moisture of 79.90%, crude protein content of 17.61%, crude fat content of 1.71% and ash content of 1.13% in the muscle. A total of 17 amino acids were detected by acid-hydrolysis method, with essential amino acids of 39.50%, and delicious amino acids of 37.12% in the total amino acids. The essential amino acid scores analysis revealed that the crucian carp hybrid had essential amino acid scores of over 1, the essential amino acid composition being in line with the FAO / WHO model standard. In this study, 23 fatty acids were detected, including 7 saturated fatty acids (SFA), 16 unsaturated fatty acids (UFA), 70.09% of unsaturated fatty acids(UFA), and 42.48% of polyunsaturated fatty acids(PUFAs). The findings indicated that the crucian carp hybrid as a new variety was featured by high dressing rate, rich and reasonable composition in essential amino acids, rich in fatty acid, and high content of unsaturated fatty acids, especially highly unsaturated fatty acid content.
