Abstract: Songpu mirror carp Cyprinuscarpio Songpu weighting about (1060±40)g were reared in a 1.8 m×1.8 m×1.0 m net cage disposed in a recirculating tank and fed basic diet (control group),and the basic diet containing 600 mg/kg of vitamin E (group VE), 500 mg/ kg of gamma amino butyric acid (group GABA), 0.5 mg/kg of sodium selenite (group Se) and 600 mg/kg VE+500 mg/kg GABA+0.5 mg/kg sodium selenite (composite group) for 13 days. Then physiological and biochemical indicators in serum sampled from caudal vein, and antioxidant capacity and quality in muscle were determined in the fish whose muscle was exposed to air for 15 min at air temperature of 21 ℃ before and after the air exposure in order to investigate the effects of air exposure and antioxidants on serum biochemistry, muscle antioxidant and quality of Songpu mirror carp. The results showed that there were significantly higher activities of catalase (CAT) and superoxide dismutase (SOD) and lower content of malondialdehyde (MDA) in the Songpu mirror carp in composite group and drip loss in group Se (P<0.05), without significant difference in blood biochemistry in the fish fed the diets containing antioxidants before air exposure (P>0.05). The Songpu mirror carp fed the diets containing GABA, VE and composite antioxidants and exposed to air for 15 min had significantly lower contents of blood cortisol and glucose (P<0.05), with significantly higher activities of SOD and CAT and lower content of MDA in group VE and composite group(P<0.05). There were significantly higher content of glutathione (GSH) in group Se and composite group (P<0.05) and significantly lower storage loss in muscle in group VE and composite group(P<0.05), indicating that the GABA and composite antioxidants lead to significant decrease in storage loss in muscle(P<0.05). The findings indicated that both VE and composite antioxidants alleviated the stress caused by air exposure on Songpu mirror crap and improved the antioxidant capacity and the quality of carp to a certain extent.
