Abstract: Chinese mitten - hand crab ( Eriocheir sinensis) averaging about 60 g/individual were stocked into a 4 m × 4 m × 2 m net cage at a rate of 0.75 crab/m^3 and fed mixed feed (60% fresh flesh of clam Anodonta woodiana pacifica +40% commercial feed)( group A) and commercial feed (group B, control group) for 45 days. Analysis of free amino acids (FAA) by HPLC showed that there were 21 amino acids and their derivafives in muscle and liver from the crab. The growth rate was 93% in group A and 82% in group B. There were the same composition of total FAA, essential FAA, and flavor amino acids in the muscle and liver in two groups, but the content was significantly higher in group A than that in group B. Thus, the crab had higher contents of total FAA, and flavor substance and faster growth when fed the clam flesh than when fed the commercial feed.
