Abstract: The nutrient compositions were analyzed and the nutritional value was evaluated in mantle membrane, gonad and adductor of clamModiolusmodioluswith body weight of 81.81-126.48 g collected in coastal Dalian. The results showed that the moisture was varied from 73.50% to 81.25%, the content of crude protein was changed from 7.18% to 16.40%, the content of crude fat from 1.46% to 2.83%, and the ash content from 1.89% to 2.32%, the maximal crude protein content and ash in the gonad and adductor, and the minimal crude lipid in the gonad and adductor. There were 16 amino acids in the 3 tissues, with the amino acid content from 8.38% to 15.71%. The ratio of essential amino acid (EAA) levels to total amino acid (TAA) levels was found from 34.61% to 38.59%, and the ratio of essential amino acid (EAA) to non-essential amino acid (NEAA) was from 52.92% to 62.84%, with the first limited amino acid of methionine+cystine (Met+Cys) in the 3 tissues. The polyunsaturated fatty acid (PUFA)levels in the 3 tissues were varied from 14.86% to 32.90%, the maximum in the gonad and adductor, with the docosahexaenoic acid(DHA)content from 4.57% to 11.72% and eicosapentaenoic acid(EPA) from 6.93% to 23.60%. The findings indicated thatModiolusmodioluswas delicious and had high nutritional value, especially the gonad and adductor muscle.
