Abstract: The oil was extracted from ascidian by supercritical fluid CO2 and ethyl acetate, and its antioxidant activity was studies with OSI meter. The oil extracted is more pure by supercritical fluid CO2 than by ethyl acetate, and contains more eicosapentaenic acid (EPA) and docosahexaenic acid (DHA) with high antioxidant stability. Its lp is 13.9 h( Styela dava) and 15.5 h( Ciona intestinalis) at 40℃. Some antioxidants were added into the oils to improve their antioxidant stability. The extraction from Tanshen by ethyl acetate has strong antioxidant activity: when being added 0.04%, the antioxidant stability of oil increased 8 - 10 folds, and the antioxidant activity is stronger in the oil extracted by ethyl acetate than with supercritical fluid CO2.
