Abstract: The nutritional composition of the edible parts of ascidian Halocynthia roretzi including crude protein, crude fat, carbohydrate, ash, amino acids, mineral elements as well as fatty acids was analyzed. Results showed that there were 39.60% of crude protein, 6.53% crude fat, 25.79% ash and 9.19% carbohydrate in the edible parts of the ascidian. The animal had 29.50% of amino acids, in which the essential amino acids comprised 51.40% of the total amino acids, especially 36.37% of the delicious amino acids in the total amino acids with the average score of essential amino acids of 90. 0 ± 15.7. The results also indicated that there was rich mineral elements such as Na, Mg, Ca, P, Fe, Zn, Cu, Co, V, and Mn in the edible part of the animal, especially Zn. Halocynthia roretzi as source of n -3 series polyunsaturated fatty acids was rich in unsaturated fatty acids.
