Abstract: Contents of nutrients in muscle of the wild and farmed Chinese softshelled turtles (\%Trionyx sinensis\%), including protein, amino acids, fats, fatty acids were determined. Compared with the wild turtle, the results illustrated that (1)the farmed turtle had significant decrease in the protein content and percentage of lysine, glutamic acid and alanine, but increase percentage of valine, glycine and serine; (2)it obviously improved the fat content and its eicosapentaenoil acid and docosaheraenoic acid percentage, but had reduction in linolenic acid and eicosadonoic acid percentage; (3)it apparently had increase the cholesterol content In addition, it was found that valine was the first limited amino acid of muscular nutrition for food in turtles Based on the data above, the nutritive value and health-keeping value of muscle were evaluated in wild and farmed turtles and differences between both turtles were approached in this paper
