Abstract: In order to carry out proteomics studies in terms of aquatic products quality and safety control,the main proteomics research technologies and typical workflows were firstly reviewed.Then,the growth environment,captured methods,feed composition,as well as processing and storage methods were discussed in this paper to evaluate the applications of proteomics in the field of aquatic products quality studies.Identification of pathogenic microorganisms,allergen detection and aquatic products materials authentication were listed in aquatic products safety studies section.At the end,the problems such as low reproducibility of two dimensional electrophoresis,as well as the limitations caused by high molecular weight,low molecular weight and low ionization levels of aquatic products protein were discussed.Besides,development of new proteomics research technologies,combination of proteomics methods and consummation of gene and protein data base were also prospected in this paper.This review could offer reference for the proteomics researchers engaged in aquatic products.
