Abstract: The parameters of the two enzymatic hydrolyzing technology with hot water were determined in extracting fucoidan from sporophyll powder of sea mustard Undaria pinnatifida. The optimum factors were determined for Novozymes Viscozyme L through the orthogonal test: the Novozymes Viscozyme L added 0. 12%, temperature 50℃, pH 5.5 and 30 minutes. The yield rate of fucoidan extracted was 5. 171% under the optimal conditions, in which the content of SO4^2- was 1. 432% , and the content of polysaccharides was 21.38%. The optimum factors for Celluclast BG were as the following: the Celluclast BG added 0. 227%, temperature 45℃, pH 4.5 and 70 minutes,the yield rate of fucoidan extracted being 5. 720%, in which the content of SO4^2- was 1.118%, and the content of polysaccharides was 28. 24%. The yield rate of fucoidan extracted was higher by enzymatic hydrolysis with hot water extracting technology than by the traditional extracting technology(4. 665% ).
