Abstract: Nine diets containing five levels of dextrin ( 0, 10%, 20%, 30% and 40% ) and four levels of α - starch ( 10%, 20%, 30% and 40% ) , were fed to Chinese sturgeon(Acipenser sinensis) weighing (9.36 ±0.97) g for 60 days. The results showed that the amylase activity in stomach decreased while it increased in duodenum, and valvula intestine in the fish fed the experimental diets. There was no amylase activity in livers. In the diets containing different levels of dextrin, the amylase activity in stomach, duodenum, and valvula intestine reached a maximum level 5, 3 ,and 3 h after the fish fed the diets containing 20%, 30% and 10% of dextrin, respectively. The sturgeon fed the diets containing 40%, 20% and 20% of α - starch had the maximal amylase activity in stomach, duodenum, and valvula intestine 5, 5, and 3 h after feeding, respectively. There was significant difference(P 〈 0. 05 ) in amylase activity between the experimental groups. About 30% dietary dextrin is appropriate, according to the effect of different kinds and levels of carbohydrate on the amylase activity in various of alimentary canals.
