Abstract: Microwave vacuum drying is a new technology which takes the advantages of both microwave and vacuum drying.The characteristics of microwave vacuum drying technology is suitable for food drying.The principle, characteristics and applications in food industry of microwave vacuum drying are reviewed in this paper. The existing technical problem and progress in research are analyzed as well. With the development of computer monitering and automation microwave vacuum drying technology will be used widely in food industry.
